Groceries from Healthy Living Market

“I can’t believe you’d eat raw fish at home!” I get it people, but I’m convinced that there are WAY worse things that we consume. I absolutely love preparing salmon or tuna poké bowls with super fresh ahi grade fish from reputable local shops like Moby Ricks or Healthy Living Market here in Saratoga Springs. The advantage of getting the fish from Healthy Living Market & Café is that I can pick up anything else I need (I usually need the scallions) right there in one stop. I can then get to work on my 5 minute poké bowls. Beautiful, nutritious, and super fast

A couple months ago, I shared the recipe for my Salad Niçoise, my go-to salad for brunch or lunch entertaining. Today I wanted to share my simple recipe for poké bowls. I like to keep asian dressing basics in the pantry including soy sauce, rice vinegar and toasted sesame oil. This allows me to throw together these 5 minute poké bowls with very few additional groceries needed.

5 Minute Poké Bowl Recipe


  • 1 lb ahi tuna or salmon from reputable supplier
  • 1 cucumber, thinly sliced
  • 1/2 cup thinly sliced scallions
  • 2 avocados, cubed
  • 2 cups cooked quinoa, rice or grain medley
  • 2 Tbsp soy sauce
  • 1 tsp of rice vinegar
  • 1 tsp of toasted sesame oil
  • 1/2 tsp red pepper flakes
  • sesame seeds for garnish

Thinly slice cucumber and scallions. Peel and cube avocados. Whisk together soy sauce, rice vinegar, toasted sesame oil and red pepper flakes. Toss with cubed raw fish. Spoon desired amount of quinoa into each bowl (it’s best if grain base layer is warm). Top with marinated cubed fish. Top fish with cucumbers, scallions and avocado. Garnish, if desired, with sesame seeds. Serve immediately.

Time-Saving Tips

I often use a pre-cooked grain, and steam it for a couple minutes when pressed for time. My favorite is this 7 grain medley that I get from Healthy Living Market. Also, it’s sometimes tough to cleanly cut raw salmon. Place the salmon in the freezer for about 30 minutes before cubing with a sharp knife for a quick, clean cut.
